Mongo Hopia Recipe | STEP BY STEP

Here's the recipe of Hopia, a popular Filipino snack which consist of sweet bean-filled pastry.
These sweet roll are not just famous in the Philippines but also very well known in other parts of Asia like China, Indonesia and Japan. There are various type of filling such as mung bean (munggo), purple yam (ube) and azuki bean. There are even different types of dough the flaky one and the cake-dough one. 

Today I am going to show you how to make the flaky type which I think came out pretty well. The consistency of crust was just perfect, flaky and moist at the same time. While for the taste, what can I say, it have the right amount of sweetness. DELICIOUS!

Even though the original Hopia recipe used shortening/lard, I didn't use it because I couldn't find it here in Italy. So, I skipped that part and used regular butter instead and it came out just fine.

Mongo Hopia Recipe

Prep: 15 minutes
Cook: 20 minutes
Yields: 20 hopias

INGREDIENTS:

Dough:
  • 2 cup all purpose flour
  • 1/2 cup vegetable oil
  • 1/2 cup water
  • Pinch of salt
Roll-in fat:
  • 1 cup all purpose flour
  • 1/2 cup butter
  • 1/2 cup sugar
Filling:
  • 1-1/2 cups mongo beans (boiled and mashed)
  • 1 cup sugar
Egg wash:
  • 1 beaten egg
DIRECTIONS:
Filling: cook mongo with water until it has turned into a thick paste and mashed. Then add sugar and mix well. Chill until thoroughly cool.

Dough: in a bowl combine flour, oil, salt and water; mix well until it forms to a dough. And set aside.

Roll-in fat: in another bowl combine flour, sugar and butter; mix well until all combine.
Combine Dough and Roll in fat: preheat oven to 400 °F. Roll out dough in 1/2 inch thick then put the roll-in fat in the center and spread. Gather the edges to seal in the roll in fat. Then roll the dough like a jelly roll. Rest for a few minutes. Roll out the dough to flatten and fold into half. Rest for few minutes. Repeat this step twice, resting the dough after every handling. Flatten the dough and roll again like a jelly roll. Cut into 20-25 pieces, depending on of hopia you want. Roll out with the cut side up and then spoon the filling in (about 1 tbsp). Collect all the sides to create a ball then flatten with the smooth side up. Lay the hopia pieces on a baking pan and spread with egg wash. Bake for 15-20 minutes or until the top is golden brown.

 1. PREPARE MONGO FILLING

2. PREPARE DOUGH



3. PREPARE ROLL-IN FAT  


4. SPREAD ROLL-IN FAT ON THE DOUGH

5. ROLL LIKE A JELLY ROLL

6. FLATTEN THE DOUGH

7. FOLD INTO HALF

8. REPEAT PROCESS

9. SHAPE LIKE A JELLY ROLL AND CUT INTO PIECES

10. ROLL OUT WITH THE CUT SIDE UP
AND SPOON THE FILLING IN

11. COLLECT ALL THE SIDES TO CREATE A BALL

12. FLATTEN WITH THE SMOOTH SIDE UP

13. SPREAD WITH EGG WASH

14. BAKE FOR 15-20 MINUTES UNTIL GOLDEN BROWN
