Pancit Bihon Filipino Vermicelli Noodles Recipe



Pancit is one of my favourite Filipino food. It's mainly made with vermicelli noodles, chicken flakes and veggies. Perfect for family gatherings and special parties, this recipe is simple yet delicious! Hope you enjoy it!

INGREDIENTS:
For the chicken & veggie:
  • 4 tbsp oil
  • 3 cloves garlic, chopped
  • 300g breast chicken flakes, boiled
  • 3 medium size carrot stripes
  • 2 small onions, sliced
  • 500g green beans stripes
  • 1/2 cube chicken stock (maggi), crushed
  • 1 tsp salt
  • 2 tbsp soy sauce
  • 1 tsp black pepper, freshly ground
  • 1/4 tsp red chilli powder
For the noodles:
  • 400g rice vermicelli noodles
  • 100g soy vermicelli noodles (soak in water for 10 minutes before use)
  • 1 maggi chicken stock cube
  • 1/2 tsp black pepper
  • 3-4 tbsp soy sauce
  • 1/2 tsp salt
  • 1 litre chicken stock
  • 2 tbsp oil

DIRECTIONS:
  1. In a small pot heat chicken stock on medium low heat. Stir in half maggie cube and 1 tablespoon soy sauce and bring to a boil. 
  2. In a large pot heat 4 tablespoons of oil on medium high heat, saute garlic for 2 minutes until slightly golden brown. 
  3. Add onion stir for 2 minutes until soft and translucent. Add chicken, black pepper, maggi cube, salt and red  chilli powder. Stir fry for about 5 min or until most of the moist is gone. 
  4. Add carrot, green beans, 2 tablespoon of soy sauce stir fry 2 minutes. Cover for 5-6 minutes and cook vegetables until soft. 
  5. After that remove from the pan and transfer into a large bowl. 
  6. In the same pot pour 1 litre chicken stock, 3 tablespoons soy sauce, 1/2 teaspoon salt, 1 maggi cube, 2 tablespoons oil, 1/2 tsp black pepper. 
  7. Once the liquid starts boiling add in the vermicelli noodles, stir and soak on medium low heat until noodles are soft; this procedure will take about 5 minutes. Use two spatula to mix the noodles. 
  8. Once all the noodles has absorbed all the liquid add veggie and chicken mixture and mix until combined completely. 
  9. Turn off and serve with lemon juice from the lemon slices.
Note: If noodles are too dry add more chicken stock or water.
