Spicy & Cheesy Chicken Rolls Recipe
INGREDIENTS:
- 2 chicken breast, cut into cubes
- 1 medium size onion, diced
- 2 green chilies, sliced
- 10-12 fresh mint leaves
- 1 egg
- 1 slice of bread
- 1 tbsp vegetable oil
- 2 tbsp chicken tikka masala mix powder
- 1 cup mozzarella cheese, grated
- 1 medium size green bell pepper, chopped
- all purpose flour as needed
- 2 beaten egg
- breadcrumbs as needed
DIRECTIONS:
- In a food processor add onion, green chilies, mint leaves, egg, slice of bread and vegetable oil. Blend until ground.
- Then add in chicken and tikka masala powder. Blend until the chicken is completely minced.
- After that take about 3-4 tbsp of the chicken mixture and place that in the middle of a piece plastic wrap. Smooth out and flatten the chicken in a rectangular shape (15x20 cm).
- In the center of the chicken add some grated mozzarella cheese and bell pepper.
- With the help of the plastic wrap roll the chicken like a when you roll sushi.
- Once it's all roll up you'll end up with a kind of a big sausage. Now cover the chicken sausage with the plastic wrap like a candy. (this recipe makes about 4 chicken rolls long 20 cm)
- Freeze the chicken rolls for 8-10 hours.
- After 10 hours the chicken roll should be firm enough to cover in flour then in beaten egg and lastly in breadcrumbs.
- At this moment you can either put the chicken rolls back in the freezer (for later use) or defrost for 3 hours and then fry.
- After 3 hour deep fry the chicken in hot oil on low heat for 7 minutes. After 7 minutes turn the heat to high and fry for another 3 minutes so that the chicken roll turns golden brown and crispy.
- After 10 minutes remove from oil and transfer on a paper towel to remove excess oil.
- Cut chicken roll in 6-7 equal pieces and serve with mint chutney!
