A recipe I know all Filipinos are proud of! Lumpia (shanghai type) is a type of egg roll, except it's mainly filled with meat. You could use chicken or beef or both! It's a yummy recipe and great to serve as finger food. VERY EASY!
Lumpia Shanghai Recipe

INGREDIENTS:
- 500g minced chicken
- 1 green chilli chopped
- 1/4 cup bell pepper, finely chopped
- 1 small size onion, finely chopped
- 1 small size carrot, finely chopped
- 1 clove garlic, chopped
- 1 tsp salt or to taste
- 1/2 tsp red chilli powder, or as needed
- 1/4 tsp cumin powder
- 1 tsp soy sauce
- 1 tbsp frozen coriander leaves, chopped
- 15-20 spring rolls/lumpia wrappers
- 1 beaten egg for sealing
- oil for frying
DIRECTIONS:
- In a large bowl combine all the ingredients except the spring rolls wrappers, beaten egg and oil.
- Mix well until combined thoroughly.
- Separate wrappers into individual sheets. On a flat working surface, lay the wrapper like a diamond.
- Spoon about 2 tablespoons of meat mixture on the middle of the wrapper.
- Fold the bottom pointed end of wrapper over filling. Fold side ends of the sheet inward and roll tightly into a log about 3/4-inch thick and 5-inch length.
- Wet the pointed edge of the wrapper with a dab of beaten egg to completely seal. Repeat with the remaining mixture.(for proper way, see video).
- Heat the cooking oil in a deep fryer. Deep fry the lumpia for 10 to 12 minutes.
- Remove from the deep fryer and let the excess oil drip.
- Transfer to a serving plate. Serve with sweet and sour sauce .
