Nando's Chicken Bread Balls

Nando's Chicken Bread Balls Recipe

INGREDIENTS:
  • 2 chicken breast, boiled and shredded
  • 1 pack of ready-made Nandos Peri-Peri marinade
  • 1/4 cup chopped red pepper
  • 2 tbsp mayonnaise
  • 1 tbsp oil 
  • 8-10 bread slices
  • breadcrumbs as needed
  • 2 beaten eggs
  • Oil for frying
DIRECTIONS:
  1. In a frying pan heat a tbsp of oil. Once hot add shredded chicken, peri-peri seasoning and red pepper. Mix well until most of the moist is gone. Transfer in a bowl and add mayonnaise. Mix well and let cool completely before using.
  2. To prepare the bread balls take bread slices and cut the edges so that the brown part is removed.
  3. Slightly soak the bread in some water and squeeze with clean hands. Add about a tablespoon of peri-peri mixture in the middle of the wet bread slice. Bring the edge to the centre and close securely so that you end up with a ball shape.
  4. Repeat with the rest of the stuffing. Then coat each ball first in egg and then breadcrumbs.
  5. Deep fry in hot oil for 2-3 minutes or until golden brown.
  6. Serve with your favourite dipping sauce.
