Fluffy Strawberry Pancake Recipe


As you already saw from the title this post is going to be all about pancakes!

This morning I was craving for pancakes so I decided to make some. I wanted to add a bit of fruit so I took some frozen strawberries that I stored in the freezer and combined them to my pancake batter (as a substitute you can add blueberries or raspberries whatever you have in hand). 

Before cooking your pancakes remember to always let the batter sit for at least 10 minutes. That will your pancakes high and soft. You can serve them as you please with nutella or honey, I topped mine with strawberry sirup which was made by my mom.

For a first-timer I'm really proud of myself, the final product came out truly good just light and fluffy!

Fluffy Strawberry Pancake

Cook: 15 min
Yield: 6-8 pancakes

INGREDIENTS
  • 1-1/2 cups all purpose flour
  • 1/2 tsp salt
  • 3 tsp baking powder
  • 3 tbsp sugar
  • 1/2 tsp vanilla
  • 1/2 cup diced strawberries
  • 1 egg 
  • 3 tbsp unsalted butter, melted
  • 1-1/3 cups milk
DIRECTIONS
In a bowl sift together the flour and baking powder then add sugar and salt. Combine melted butter, egg, milk and vanilla into the flour mixture. Mix well until smooth and no lumps can be seen. Then add strawberries and combine. Let sit at least 10 minutes. 

Heat a large nonstick skillet or griddle over medium high heat. Pour or scoop about 1/4 cup batter onto the griddle, to make a pancake. Cook until you see bubbles on the surface of the pancakes, about 1-2 minutes. Flip with a thin spatula, and cook until browned on the underside, 1 minute more. Serve immediately or transfer to a platter. Repeat procedure with the remaining batter.
