What do you think about tuna patties? I don't know about you but I love them, actually I adore any type of fish kabob. I still remember waiting anxiously for the patties my mom used to make whenever we had some fish leftover.
In this recipe I did some few variations from my mom's one:
- I replaced boiled and mashed potatoes with grated ones (I basically grated a potato and squeezed all the starch out);
- I used tuna instead of leftover salmon. You can use any type of fish, it's up to you!
I think the best part of this recipe is that it's really easy. Seriously, it consists of just 3 STEPS:
- Mixing;
- Shaping the patties;
- Frying.
Simple right!
INGREDIENTS:
- 1 medium potato, (150g) grated and squeezed
- 1/3 cup corn
- 1/2 cup tuna, oil can drained and flaked
- 1 egg
- 2 slices of bread
- 1/2 cup freshly chopped coriander
- 1/3 cup cheese, shredded
- 1/2 cup breadcrumbs
- 1/2 tsp bishop's weed, ajwain (optional)
- 1/2 tsp freshly ground black pepper
- 1 tsp salt
- 1 tsp sweet paprika powder
- oil for frying
DIRECTIONS:
- In a big bowl combine potato, tuna, cheese, breadcrumbs, corn and slices of bread (break them into little pieces until you have small crumbs).
- Add egg, coriander and all seasonings (paprika, black pepper, salt, ajwain), mix well.
- Take about 2 tablespoons of mixture and shape into a patty. Repeat process until mixture is finished. (makes 10-12 patties)
- Heat oil over medium high heat on a nonstick pan. Cook patties for 3 minutes for each side until golden brown.
- Transfer the patties to plate lined with paper towel to remove excess oil. Reapet process until all your patties are done.
- Serve with ketchup or any sauce of choice!
