Chicken Curry Recipe


Here's a quick and easy way to make chicken curry. It's super yummy and delicious.


Chicken Curry Recipe

INGREDIENTS
  • 700g chicken cut into pieces
  • 4 tbsp vegetable oil (for the masala)
  • 1 big size onion, chopped
  • 1 tbsp garlic, ground
  • 1 tbsp ginger, ground
  • 175g canned tomato sauce
  • 1 tsp salt 
  • 1/4 tsp red chili powder
  • 1/2 tsp turmeric powder
  • 4 tbsp vegetable oil (for chicken)
  • 3/4 tsp cumin powder
  • 1 tsp dried coriander seeds, crushed
  • 1/3 water (extra 1/3 cup later)
  • 1/2 tsp garam masala
  • 1/3 cup fresh coriander leaves, chopped
  • 1 green chili (for garnish)
DIRECTIONS:
  1. In wok or a karai over medium-high heat add about oil. 
  2. Once the oil is hot add chopped  onion and stir fry for 1-2 minutes or until golden brown. 
  3. Then add garlic, ginger and stir well for extra few minutes. 
  4. After that add tomato sauce and smash with a spatula.
  5. Add salt, red chili powder and turmeric powder. Mix well
  6. After 2 minutes of stirring turn off the heat.
  7. Transfer the fried masala in a food processor and blend until smooth. Set aside.
  8. Meanwhile in the same wok cleaned and dried heat oil over high heat and add chicken pieces. 
  9. Fry for 2 minutes then add seasoning (cumin powder and dried coriander seeds). Fry for more 2 minutes.
  10. Then add water to the blended masala and mix it in the chicken.
  11. I'm keeping the heat to high and fry a little bit not to much until everything is well combined.
  12. Cover and let simmer for 15-20 minutes just until the chicken has completely softened up.
  13. After 20 minutes, remove the lead and turn the heat to high.
  14. Then add water and fry nicely for 1 minute.
  15. If preferred a thicker gravy add more water. 
  16. Lastly add garam masala and coriander leaves. Mix well.
  17. Turn off the heat and its done!
  18. Garnish with green chili.
