Sweet Lassi | Healthy Punjabi Lassi

So, Ramadan is here in the corner and I couldn't be more excited to share with you guys my delicious recipe that I enjoy cooking during this special month.

Today's recipe is going to be about Sweet Lassi. This sweet lassi is creamy, light and extremely delicious. It's perfect for those long hot summer days which will definitely keep you hydrated throughout the day!

Sweet lassi is a popular drink in punjab and north india. It's made out of fresh curd, milk or water and sugar. In punjab lassi is usually served in huge glass and served with a few tbsp of butter/makhan.
Lassi can also be served with saffron, cardamom powder or rose water.

INGREDIENTS:
2 cups chilled yogurt
2 cups chilled water or milk
5-6 tbsp sugar or add as per taste (for healthy version add 3-4 tbsp honey)
1 tsp cardamom powder or 2 tsp rose water
6 ice cubes (optional)
1 to 2 tbsp chopped nuts (optional)

DIRECTIONS:
  1. In a blender add chilled yogurt. And mix until smooth. Make sure the yogurt is completely smooth before adding any other ingredients to it.
  2. Then add chilled water or milk. Make sure lassi is neither too thin or too thick.
  3. Add in about sugar or honey.
  4. For flavoring add cardamom porwder. Place about 6 cardamom pods in a mortar and crush them until they open up. Thenremove the husk and crush the seeds, Crush them to a fine powder. If you don't like the taste of cardamom you can add 2 tsp of rose water instead.
  5. Once it's all crushed up 1 tsp of this cardamom powder in the yogurt mixture.
  6. Then blend everything until smooth or when you see a nice frothy layer on top. Set this aside.
  7. Chop a few almonds and walnut to serve on top of the lassi.
  8. Now pour the lassi in a glass and with a spoon take the froth and place it on top of it
  9. Sprinkle the chopped nuts and it's done.
  10. Serve it with tasty date or even with ice cubes.
