Bihari Chicken Boti | Pakistani Recipe


Assalam Alaykum and late Eid Mubarak to everyone of you! 

In this video I'm showing you how to make Bihari Chicken Boti/tikka (I made it specially in Eid). This recipe is a very tasty one the chicken can be fried in a pan or either baked in the oven. 

What makes this recipe super special is the use of coal smoke which is given to the marinated chicken before cooking. This gives the chicken that smoky and bbq flavor which will definitely make your mouth water!

Bihari Chicken Boti Recipe

INGREDIENTS:
  • 4 tbsp plain yogurt
  • 2 tbsp onion paste
  • 1 tbsp garlic and ginger paste
  • 2 tbsp fried onion, crushed
  • 1 tsp salt
  • 1 tsp garam masala
  • 1 tsp red chili flakes
  • 1-2 tbsp roasted gram
  • 1 tsp poppy seeds
  • 4 tbsp olive oil (better if mustered oil)
  • a pinch of orange food coloring powder
  • 600 g boneless chicken, cut into cubes (3 chicken breast)
  • 1 piece of coal
  • a bit of oil for frying


DIRECTIONS:
  1. In a food processor blend nicely roasted gram and poppy seeds.
  2. In a bowl add yogurt, onion paste, garlic and ginger paste, fried onion, salt, garam masala, red chili flakes, olive oil, and ground gram and poppy seeds and food coloring. Mix everything well with a spoon. 
  3. Add the mixture in the chicken cubes and mix well. Marinate for at least 4 hours in the fridge.
  4. After that burn a piece of coal on the stove for 15-20 minutes or until it's super hot.
  5. Meanwhile transfer the marinated chicken in a wok or a pan which has a proper lid. 
  6. With the help of a spoon make a hole in the middle of the chicken and then place in it a piece of foil.
  7. Once the coal is hot transfer that on the foil. To give smoke drizzle a few drops of oil on top of the hot coal and cover the wok/pan immediately. Give coal smoke for 8-10 minutes. 
  8. After that discard the the foil and the coal. Then star skewing the chicken in a skewer (place 4 pieces of chicken in a skewer). Makes about 8 skewers.
  9. Heat a non-stick pan or tawa. Once it's hot place a bit of oil on the pan and place on it the chicken skewers. Cover and cook for 6-8 minutes on medium-low heat. Check and turn the chicken every 3 minutes. After 8 minutes of frying turn the heat to high and keep frying the chicken without covering for another 2-3 minutes or until golden brown.
  10. Remove from tawa and place on a plate. 
  11. Serve with chutney and roti. Done!
