Nimki/Namak Pare Recipe



Crispy, crunchy savory made from deep-fried flour and carom seeds served as snack


Today I am sharing with you a delicious tea time snack recipe that is really easy to prepare. So I thought of making this delicious savory of namkeen. Kids love this snack.

Nimki/Namak Pare Recipe

This recipe will serve 6
Preparation time 35 minutes
Cooking time 20 minutes.

INGREDIENTS:
  • 2 cups (280g) plain flour
  • 1 tsp (7g) salt
  • 1 tsp (2g) carom seeds/ajwain
  • 1/4 cup (154g) vegetable oil
  • 1/2 cup (115g) water (+ 1-2 tbsp if needed)
  • oil for frying

DIRECTIONS:
  1. In a large mixing bowl add flour.
  2. Add salt, ajwain (carom seeds) and oil in the flour.
  3. Mix everything until the dough turns into a crumbly consistency.
  4. Then gradually add water and start kneading into a neither too hard nor too soft dough. 
  5. Once kneaded cover the dough with a damp cloth and let rest for 25-30 minutes.
  6. With a rolling pin roll dough very thin. 
  7. Now using a knife or pizza cutter cut the dough vertically into 1-1.5 cm wide strips.
  8. Then cut the dough diagonally into 2.5-3 cm wide strips.
  9. Now to fry the maida namkeen, heat oil in a kadhai.
  10. Check if oil is hot enough by adding a small piece of dough.
  11. Once the oil is ready add the slices of nimki in batches.
  12. Fry the namkeen or nimki for 2-3 minutes in medium-low heat until it becomes golden in color.
  13. Once fried, take the namkeen out and place it on kitchen towel or paper for soaking extra oil.
  14. Repeat process with the rest of the dough.

Aternative Triangle Shape Nimki

  1. Take the dough and roll it out into a sausage like form.
  2. With a sharp knife cut the dough into small lime size pieces.
  3. Working one dough piece at a time with a rolling pin roll dough into 4-5 inch wide circle.
  4. In the half side of the dough spread some oil then fold it in half. 
  5. Then spread some oil in the half part of the dough fold it again in half (you should end up with a triangle shape).
  6. Heat the oil in a frying pan on medium heat. Frying pan should have at least 1 inch of oil. To check if the oil is ready, put a small piece of dough in the oil. The dough should make the oil sizzle and come up very slowly.
  7. Fry nimkies in batches, making sure to place just enough nimkies to cover the frying oil. Fry them until both sides are a light golden-brown. This should take about 7 to 8 minutes.
  8. Take them out over paper towel, which will absorb the extra oil.
  9. Once fried, take the namkeen out and place it on kitchen towel or paper for soaking extra oil.
  10. Delicious namkeen is ready.
