Crispy, crunchy savory made from deep-fried flour and carom seeds served as snack
Today I am sharing with you a delicious tea time snack recipe that is really easy to prepare. So I thought of making this delicious savory of namkeen. Kids love this snack.

Nimki/Namak Pare Recipe
This recipe will serve 6
Preparation time 35 minutes
Cooking time 20 minutes.
INGREDIENTS:
- 2 cups (280g) plain flour
- 1 tsp (7g) salt
- 1 tsp (2g) carom seeds/ajwain
- 1/4 cup (154g) vegetable oil
- 1/2 cup (115g) water (+ 1-2 tbsp if needed)
- oil for frying
DIRECTIONS:
- In a large mixing bowl add flour.
- Add salt, ajwain (carom seeds) and oil in the flour.
- Mix everything until the dough turns into a crumbly consistency.
- Then gradually add water and start kneading into a neither too hard nor too soft dough.
- Once kneaded cover the dough with a damp cloth and let rest for 25-30 minutes.
- With a rolling pin roll dough very thin.
- Now using a knife or pizza cutter cut the dough vertically into 1-1.5 cm wide strips.
- Then cut the dough diagonally into 2.5-3 cm wide strips.
- Now to fry the maida namkeen, heat oil in a kadhai.
- Check if oil is hot enough by adding a small piece of dough.
- Once the oil is ready add the slices of nimki in batches.
- Fry the namkeen or nimki for 2-3 minutes in medium-low heat until it becomes golden in color.
- Once fried, take the namkeen out and place it on kitchen towel or paper for soaking extra oil.
- Repeat process with the rest of the dough.
Aternative Triangle Shape Nimki
- Take the dough and roll it out into a sausage like form.
- With a sharp knife cut the dough into small lime size pieces.
- Working one dough piece at a time with a rolling pin roll dough into 4-5 inch wide circle.
- In the half side of the dough spread some oil then fold it in half.
- Then spread some oil in the half part of the dough fold it again in half (you should end up with a triangle shape).
- Heat the oil in a frying pan on medium heat. Frying pan should have at least 1 inch of oil. To check if the oil is ready, put a small piece of dough in the oil. The dough should make the oil sizzle and come up very slowly.
- Fry nimkies in batches, making sure to place just enough nimkies to cover the frying oil. Fry them until both sides are a light golden-brown. This should take about 7 to 8 minutes.
- Take them out over paper towel, which will absorb the extra oil.
- Once fried, take the namkeen out and place it on kitchen towel or paper for soaking extra oil.
- Delicious namkeen is ready.
