Cheese Balls | Snack Ideas | Super Cheesy

Today I'm sharing with you this Cheese Balls recipe which is perfect to serve as snack. Your kids will definitely love these!

My first time making these didn't really turned out how I wanted them to be. Don't get me wrong they tasted amazing the only problem was that the balls didn't hold up their shape. Once it was time of frying the balls will always crack open! Not really a fun experience!

So, I thought maybe the cause of the problem was the boiled potato being not yet completely cool. Which then caused them to break while frying!

So, I tried making this another time! I didn't give up there!

The second time I tried making these again I made sure I added cornflour to the potato mixture and freeze them in the freezer for at least 1 hour before frying.

Luckily this time they didn't break! YAY! Success!
They were amazing and my sister ate the most of them! -.-



Cheese Ball Recipe

Makes: 10-12 cheese balls
Preparation: 2 hours
Easy Recipe

INGREDIENTS:
  • 4 medium potatoes, boiled and peeled (250g)
  • 50g sweet corn
  • 50g cheddar cheese, grated
  • 50g mozzarella cheese, grated
  • a handful frozen coriander leaves
  • 2 tsp coriander seeds, crushed
  • salt to taste
  • 3/4 tsp red chili, crushed 
  • 1/4 tsp black pepper, crushed
  • 1/2 tsp dried oregano
  • 1-1/2 tbsp cornflour
  • breadcrumbs as needed
  • oil for frying
Batter:
  • 2 tbsp cornflour
  • 2 tbsp all purpose flour
  • 1/3 cup water (add more or less)
DIRECTIONS:
  1. In a big bowl mash potatoes with a fork. Once mashed add seasonings salt, black pepper, red chili, cheddar cheese, sweet corn, coriander seeds, coriander leaves, dried oregano and cornflour.
  2. Mix everything well. Check the taste and add more salt or black pepper if required.
  3. Take about one tablespoon of the potato mixture and shape it into a ball then flatten it.
  4. In the center add some grated mozzarella cheese and carefully close it into a ball.
  5. Repeat the process with the rest of the potato mixture.
Prepare batter:

  1. In a small bowl add cornflour, all purpose flour and gradually add water. 
  2. With the help of a spoon mix everything into a neither too thick nor too thin batter. 
  3. Make sure there is no lumps.
Assemble:

  1. Dip each potato ball first in the batter and then roll into the breadcrumbs making sure it's all covered.
  2. Before frying place the balls in the freezer for at least one hour, deep frying to prevent cheese from oozing out.
  3. Heat oil, once the oil is ready slide the cheese balls gently into the hot oil and fry on medium heat.
  4. Once one side turns golden, turn the balls with a slotted spoon.
  5. Turn again a couple of time more to get an even golden colour.
  6. Once golden brown remove from the oil and transfer onto a paper towel to remove the excess oil.
  7. Serve warm with sweet chili sauce or ketchup!
  8. Enjoy!
