Mung Bean Paste / Filling Recipe

INGREDIENTS:

  • 200 g mung beans (washed)
  • 400 ml hot water
  • 40 g vegetable oil
  • 130 g sugar (use less or more depending on how sweet you want the mung bean paste to be)

DIRECTIONS:

  1. Rinse and wash mung beans until the water turns clear.
  2. Transfer it in a pan and soak in 200 ml hot water for at least 1 hour or until it double in size. Cover with it's lead.
  3. After 1 hour add another 200 ml of hot water and bring it to boil on medium high heat for 10-13 minutes.
  4. Once it starts boiling remove foam with a spatula.
  5. Once all the water has almost disappeared turn the heat to low.
  6. The mung bean should be completely soft by now.
  7. Start mashing and stirring the mung bean with a wooden spatula for 4-5 minutes or until it turns into a thick paste.
  8. (If preferred a smoother paste blend mung bean in a food processor).
  9. Next add oil and sugar and continue mixing everything on low heat for 6-7 minutes until sugar is completely dissolved and mung beans turn into a very thick paste.
  10. (keep an eye on it, continue checking and stirring it to prevent the bottom from burning).
  11. Once obtained a thick paste remove from heat and transfer onto a plate.
  12. Let cool completely before using.
