Easy super crispy fried fish recipe!
Super Crispy Fried Fish Recipe
INGREDIENTS:
- 4 pangasius fish fillets (about 800g) or any white fish fillet
- oil for deep frying
- ground black pepper
For batter:
- 1-1/3 cup all purpose flour
- 1 tsp salt or to taste
- 1 tsp paprika powder
- 1 tsp garlic powder
- 1/4 tsp baking powder
- 1 tbsp cornstarch
- 2 tbsp white rice vinegar
- 1/2 tsp yellow egg food colouring (optional)
- 1-1/4 cup (+/-) water
DIRECTIONS:
- In a big bowl mix together flour, salt, paprika powder, garlic powder, baking powder, cornstarch, rice vinegar, food colouring. Then add 1 cup of water. Mix well. If too thick gradually add 1/4 cup(more or less) water continue mixing until you obtain a thick smooth batter.
- Let batter rest for 10 minutes.
- Mean while season fish fillet (both side) with freshly ground black pepper. Sprinkle a bit of salt if desired.
- Then one by one gently dip fillet in the prepared batter.
- Deep fry in hot oil (120C-250F) over medium-high heat for 3-5 minutes or until crisp and golden brown. Fry fish fillet one at a time and do not over crowd the pan otherwise you will end up with soggy fish fillet (the fish will soak up all the oil).
- Remove from oil and transfer on a paper towel to remove excess oil.
- Repeat same process with the rest of the fillet.
- Serve with chips, ketchup (or preferred dipping sauce) and fresh lime!
