Pizza Pinwheels | Stuffed with Pulled Chicken Tikka





Pizza Pinwheels

INGREDIENTS


For Tikka Masala Powder Mix:
  • 1 nutmeg
  • 1 tsp cumin seeds
  • half piece of mace
  • 1 cinnamon stick
  • 1/2 tsp black peppercorn
  • 1 tsp dried fenugreek leaves (methi)
  • 4-5 cardamom pods
  • 4-5 cloves
  • 1/4 tsp coriander seeds
  • 1/2 tsp red food colouring
  • 1 tsp garlic powder
  • 1/2 tsp turmeric powder
  • 1 tsp paprika powder
  • 1/2 tsp red chilli powder
  • 1 tsp ginger powder
For Pulled chicken tikka:
  • 2 chicken breast
  • 1 tbsp homemade tikka masala powder mix
  • 1 tsp salt or to taste
  • half of a lemon juice
  • 1 cup chicken stock
  • 2 tbsp oil
For Pizza Dough:
  • 3 cups (420g) all purpose flour
  • 1 tsp salt
  • 1/2 tsp baking powder
  • 1 tsp sugar
  • 2 tbsp olive oil + 1 tbsp
  • 2 tsp instant dry yeast (7g)
  • 1 cup + 2-3 tbsp warm water
Pizza Sauce:
  • 1 cup passata
  • 1/4 tsp salt
  • 1 tsp pizza mix
  • 1/2 tsp black pepper, ground
Other:
  • chopped bell pepper, as needed
  • sliced gouda or emental cheese, as needed
  • sliced fresh mushroom, as needed
  • chopped onion, as needed
  • mozzarella cheese, as needed
DIRECTIONS:

Prepare Chicken Tikka Masala:
In a blender grind nutmeg, cumin seeds, mace, cinnamon stick, black peppercorn, fenugreek leaves, cardamom pods, cloves and coriander seeds. Blend to make a fine powder. Once blended transfer powder mix in a small container. Then add in garlic powder, ginger powder, turmeric powder, red chilli powder, paprika powder and red food colouring. Mix well.

Prepared Pulled Chicken Tikka:
With a fork pock both sides of the chicken breast. Then squeeze the lemon and sprinkle on both sides of the chicken breast the tikka masala powder mix and salt. Massage with fingers and coat the entire chicken. 
Marinate for at least 10 minutes.
Heat a pan over medium high heat and add oil. Once oil is hot add the chicken breasts. Cook each side of the chicken for at least 5 minutes. 
After that add chicken stock. Cover and let simmer on low flame for 20 minutes or until chicken is fully tender.
Next transfer chicken on a plate and shred it using 2 forks.
Once shredded place chicken back in the pan and cook for 2 minutes. Make sure the chicken is fully coated with the sauce in the pan.
Transfer on a plate and let cool completely.

Prepare Pizza Dough:
In a bowl add flour, salt and baking powder. Mix well.
Make a well into middle with the help of a spoon and place the sugar and yeast.
Pour in the warm water and olive oil. Mix well with hands and start kneading into a dough.
Keep kneading for 10 minutes. Then while kneading add a 1 tbsp of olive oil and keep kneading for another 5 minutes or until dough if smooth.
Transfer dough in a greased bowl and cover with a cloth.
Let rise for 1-2 hours or until doubled in size.

Prepare Passata/Tomato Sauce:
In small bowl combine passata, salt, black pepper and pizza mix. Mix well and set aside.

Prepare Pizza Pinwheels:
Roll out dough into a big rectangular shape.
Spread on top of it the pizza sauce and then top it sliced gouda or emental cheese, chopped bell pepper, chopped onion, sliced mushrooms, pulled chicken tikka and mozzarella cheese.
Roll dough into a jelly roll and slice about 1 inch tick slices.
Place slices on a baking tray lined with parchment paper.. Bake pizza pinwheels on a pre-heated oven (250°C /482°F) for 20 minutes or until golden brown and cheese is fully melted.
Enjoy warm!
