Easy Breakfast Recipes | Holidays Egg Breakfast Ideas




Assalam 'o' Alaykum everyone. I hope you all are enjoying your winter holidays because I'm definitely enjoying mine.

For this video I am sharing 2 easy breakfast recipes that I personally love making during my day off or during holidays. I don't know about you but for me taking time to prepare good quality breakfast is just something exciting.

Even though these recipes might seem too long too prepare they are actually every easy to make. These two recipes are fancy and quite healthy breakfast meal that you can create in your own home with ingredients you already have in your fridge.


In the video below you will learn how to make cheesy shrimp quesadilla and Shakshuka which is a tomato sauce and egg based dish. If you check out my Instagram page you will probably see a lot of Shakshuka picture on my feed as I love making this once in a while.



Cheesy Shrimp Quesadilla

INGREDIENTS:
  • 2 eggs
  • 1 avocado, mashed
  • 2 tortilla wraps
  • 1 tbsp oil
  • some cheddar cheese, grated (as needed)
  • some mozzarella cheese, grated (as needed)
  • 1/4 tsp salt
  • 1/4 tsp red chilli powder
  • 1/4 tsp cumin powder
  • 1/4 tsp turmeric powder
  • baby spinach a handful

For the shrimp:
  • 200 g shrimp, cleaned
  • 1 tbsp pineapple juice
  • a pinch of salt
  • a pinch of red chilli powder
  • a pinch of garam masala
  • some black pepper, freshly ground
  • 1 tbsp oil
DIRECTIONS:
  1. In a pan eat oil add shrimp, salt, black pepper, spices and pineapple juice. Stir and cook until everything is cooked and caramelised. Once cooked set aside.
  2. In a small bowl crack two eggs add cumin powder, salt, red chilli powder and turmeric powder. Beat egg until smooth.
  3. In a large nonstick pan add oil. Once oil is hot pour in the beaten egg. Try to shape the egg into a circle, same as the size of the tortilla wrap not any bigger.
  4. Once the egg is a bit firm place the prepared shrimp on top of it. Then top it with some baby spinach, cheddar cheese, mozzarella cheese and tortilla wrap. (the cheese is going to be the glue for this quesadilla)
  5. Once the bottom part of the egg is done gently flip over the egg and the wrap with the help of a spatula.
  6. Now spread on other side the mashed avocado and top with some more grate cheese. Cover with another tortilla wrap.
  7. Cook each side for a couple of minutes until the wrap is golden brown and fully crisp.
  8. Remove from pan and transfer to a chopping board. 
  9. Cut into 4 equal size. 
  10. Serve with mango chutney if preferred.
Shakshuka Recipe

INGREDIENTS:
  • 2 eggs
  • 1 tbsp oil
  • 1 tsp garlic, chopped (1 clove)
  • 1 medium size onion, chopped
  • 1 tomato, chopped
  • 1/2 cup canned tomato
  • 1/2 cup passata
  • salt to taste
  • 1/2 tsp red chilli powder
  • 1 tsp dried oregano leaves
  • mozzarella cheese, as needed
