Chicken Puff Pastry Ramadan Recipes


Have a busy weeknight and wondering what to make? Here is a great way to use up your roast chicken leftovers.

Of course you could make chicken sandwiches or have cold meat and salad…but if you want to try something a bit more interesting, why not try my Chicken Puff Pastry Recipe!

It's perfect for Ramadan as it can be prepared ahead of time and kept in the freezer for at least 1-2 weeks. Bake them right before Iftar and your are ready to go!


Chicken Puff Pastry Ramadan Recipes



INGREDIENTS:

  • 2 cups leftover roasted chicken, diced or shredded
  • 100g fresh mushroom, chopped
  • 50g butter
  • 1 tsp black pepper, ground
  • 1/2 tsp salt or to taste
  • 1 tsp Italian seasoning, dried
  • 1-1/2 tbsp plain flour
  • 1 cup milk
  • 1/3 cup water
  • 12 cup green peas, boiled
  • 50g cheddar cheese, grated
  • 2 puff pastry sheets
  • egg wash
  • sesame seeds as needed
  • some butter for greasing

DIRECTIONS:

Prepare Chicken Filling:
  1. In a large pot heat 50 grams of butter. Once melted add mushroom and fry for a 1-2 minutes.
  2. Season with black pepper and salt. 
  3. Add flour and stir well. 
  4. Once mixed gradually add milk to prevent any lumps forming. Stir occasionally to prevent mixture to stick at the bottom of the pan.
  5. Once the mixture turn thick add Italian seasoning, cheddar cheese. 
  6. If the mixture is too thick add some water.
  7. Next add green peas and leftover chicken. Mix well until everything is well combined.
  8. Remove from heat and let cool completely before using.
Prepare Chicken Puff Pastry:
  1. Take puff pastry sheets and with a pizza cutter or knife cut into about 10 cm large rectangle or triangle.
  2. Grease a muffin tray with some butter. 
  3. Next fit-tin the puff pastry sheets in the muffin tray.
  4. Stuff each hole with 1-2 tablespoon of chicken filling.
  5. Take each 4 ends of the pastry sheet and hold inwards and seal gently.
  6. Brush the top with some egg wash and sprinkle some sesame seeds.
  7. In a 200°C pre-heated oven bake for 25 to 30 minutes or until golden brown. 
  8. Let cool 5 minutes before removing from the tray.
