Chinese Style Egg Fried Rice

INGREDIENTS:
  • 1-1/4 cup basmati rice
  • 1 tsp salt
  • 1/2 cup frozen green peas
  • 1/2 cup diced carrots
  • 3 leaves chinese cabbage, sliced
  • 2 tbsp vegetable oil
  • 1 garlic, chopped
  • 1/4 tsp salt or to taste
  • 1/2 tsp black pepper
  • 1/4 maggi cube (3g)
  • 1 egg
  • pinch of ajinomoto salt (monosodium glutamate)
  • 2 tbsp spring onions, chopped
DIRECTIONS:
  1. In a bowl add rice and rinse with cold water until clean
  2. Cook rice in boiling water then add 1 tsp salt. Stir well and cook  for 4-5 minutes on medium high heat.
  3. After 5 minutes turn off heat and drain water from the rice.
  4. Set aside and let it cool completely.
  5. Meanwhile in a small pan bring to a boil green peas and carrots for 5 minutes or until they're soft.
  6. In a big pan over high heat add 2 tbsp vegetable oil,
  7. Once the oil is hot add garlic and fry it for 2 minutes until golden brown.
  8. Then add in the boiled veggies, the sliced cabbage, 1/4 tsp salt, freshly ground black pepper and stir well for about 1-2 minutes.
  9. Then crush the maggi cube with fingers and add it in the pan.
  10. In a small bowl beat egg with a fork and fry that with the veggies. Stir continuously until obtained a scrambled egg.
  11. Then to give more taste I'm adding a pinch of  monosodium glutamate and stir.
  12. Next add the cooked rice and stir nicely until everything is well combined.
  13. Cover and reduce heat to low.
  14. After 2 minutes uncover and turn off flame.
  15. Lastly topped with spring onion.
