Shepherd's Pie Recipe | Easy No-Fuss Recipe


Let’s enjoy this Winter Holidays with this luxurious Shepherd’s pie!



INGREDIENTS:

FOR LAMB MEAT:

  • 600 g lamb, minced
  • 8 small size onions, finely chopped
  • 2 medium size carrots, peeled and diced
  • 1/3 cup green peas, frozen
  • 1 tsp salt or to taste
  • 1/2 tsp red chilli powder
  • 1 cup (250 ml) vegetable stock or water
  • slurry (1 tbsp cornstarch + 3 tbsp water)
  • 1 tsp dried oregano
  • 1/2 tsp dried basil 

FOR MASHED POTATO:

  • 6-8 medium size potatoes, peeled 
  • 3 tbsp (85 g) butter
  • hand full of cheddar cheese, grated
  • 125 ml milk
  • salt to taste

ADDITIONAL:

  • Cheddar cheese, grated for assembling


DIRECTIONS:

  1. Place the potatoes in a pan and cover with cold water. Bring to the boil and simmer for 15 mins or until soft.
  2. While the potato are cooking, in a large pot over medium-high flame heat oil. 
  3. Once hot add chopped onion and fry for 2-3 mins or until soft and translucent.
  4. Next add minced lamb and cook until browned – breaking up any pieces as you go. 
  5. Add garlic, salt and red chilli powder. Stir well and cook meat on high flame for 5-7 mins.
  6. After that add carrots, peas and vegetable stock or water. Give a good stir.
  7. Cover with lid and let simmer on low flame for 15-20 mins or until meat is tender.
  8. By this time, the potatoes should be cooked. Drain the potatoes and mash using a potato ricer. Add butter, cheddar cheese, salt and milk and mix together.
  9. Now check the simmering lamb uncover and stir well. Add cornstarch slurry to the simmering meat to thicken the sauce. 
  10. Season with oregano, basil and give a last stir. Turn off the heat and use a slotted spoon to scoop out the lamb mixture and place into baking dish.
  11. Top the lamb with some cheddar cheese the mash potatoes, and flatten out with a spoon. Rough up the top of the mash with a fork (so you get nice crispy bits).
  12. Place in pre-heated oven for 20 minutes until the mashed potato is golden brown.
  13. Enjoy warm!

Butter Cookie Recipe
INGREDIENTS:

Butter Cookie:
  • 225g room temperature butter
  • 440g plain flour
  • 200g sugar
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1 egg
  • 1 tsp vanilla extract
Royal Icing:
  • 3 cups icing sugar
  • 2 egg whites
  • 1/2 tsp vanilla extract
  • 1 tsp cream tartar
  • Food colouring
DIRECTIONS:
  1. Whisk together flour, baking powder, and salt in a small bowl.
  2. Beat together butter and sugar in a large bowl with an electric mixer at medium-high speed until pale and fluffy, about 3 minutes in a standing mixer (preferably fitted with paddle attachment) or 6 with a handheld. 
  3. Beat in egg and vanilla. Reduce speed to low, then add flour mixture and mix until just combined.
  4. Form dough into a 12-inch log (2 inches in diameter) on a sheet of plastic wrap and roll up dough in plastic wrap. Chill dough on a baking sheet until firm, at least 4 hours.
  5. Before baking, preheat the oven to 325°F.
  6. Line your baking sheets with parchment.
  7. Slice the dough into slices about 1/8" thick and place them on the sheets about an inch apart (they won't be spreading very much, but they need air room around each cookie).
  8. Bake until JUST beginning to turn golden around the edges, about 16-18 minutes.
  9. Cool on sheets 3 minutes, then transfer with a metal spatula to racks to cool completely. Make more cookies with remaining dough on cooled baking sheets.
  10. Note: you can do many things with these cookies.You could roll the dough out and cut shapes.
Royal icing:
  1. In a big bowl combine icing sugar, cream of tartar, vanilla extract and egg whites.
  2. With an electric hand mixer beat everything until it is very stiff and white and stands up in peaks.
  3. Spread over the top of cookies and rough up the icing with a spatula so that it forms peaks. (If you want a smooth icing you may need to thin the icing down a little with more egg white or water.)

Grilled Masala Fish | Healthy Ramadan Recipes


Assalamu Alaykum everyone! Here is a quick and easy healthy recipe for Ramadan.

I am sharing with you the simplest Grilled Masala Fish recipe ever. For this recipe I used the ready-made Laziza Tandoori Malasa Mix. If you don't have one at home you can replace it with my homemade Tikka Masala Mix Recipe.

INGREDIENTS:

  • 600g Fish Fillet (any white fish will work)
  • 3 tbsp yogurt
  • half of a lemon juice
  • 2 cloves garlic, grated
  • 1 inch ginger, grated
  • 2-3 tbsp Laziza tandoori masala
  • 2 tbsp vegetable oil,
  • salt to taste,
  • 1 tbsp bread crumbs
DIRECTIONS:
  1. In a large bowl combine yogurt, lemon juice, garlic, ginger, laziza tandoori masala, salt. Mix until you obtain a thick paste.
  2. Place in the fish fillet and coat evenly. 
  3. Cover and let marinate for 3-4 hours in the fridge.
  4. After that uncover and add oil, bread crumbs. Mix well.
  5. Place each fish fillet on a roasting tray and grill each side of the fish for 15 minutes
  6. in a pre-hated oven on the highest temperature.
  7. Serve warm with your favourite chutney!

Lemon Berry Vegan Cheesecake | Ramadan Recipes


Morning guys! Here's an easy Lemon and Berries Vegan Cheesecake recipe. I made this for my colleagues and they absolutely loved it! Also, it was my first try and I'm probably making this again maybe with different flavours?

INGREDIENTS:

VEGAN CRUST
- 1 cup almond nuts
- 1 cup pitted dates
- 1 tbsp coconut oil

VEGAN LEMON CREAM
- 2 cups soaked raw cashew nuts
- 1/2 cup coconut milk (chilled over night in the fridge, use just the solid cream part not the liquid)
- 1 lemon juice
- 1/4 tsp vanilla extract - 1/2 cup vegan golden syrup

VEGAN BERRY CREAM
- 1 cup soaked raw cashew nuts
- 1 cup mixed frozen berries
- 1/4 cup vegan golden syrup

DIRECTIONS:

1. Add the almond nuts, pitted dates to the food processor and process until it starts to form into a sticky dough. It will start off crumbly, keep going until it starts to clump together in sticky clumps. Transfer to a pan and smooth it down into a pie crust. Place into the freezer to set.

2. Take your soaked and rinsed cashew nuts and place them into the blender. Add syrup, melted coconut oil, lemon juice and vanilla extract and then blend everything together until very smooth. Stop and give your blender a break as needed as this is a lot of volume to blend up. Pour this over the almond crust and smooth down with the back of a spoon. Return to the freezer to set – about 1 hour.

3. To make the mixed berries cream add cashew nuts, mixed berries in the blender. Blend until very smooth. Again this will take time so have some patience. 
Pour the mixed berries cream on the chilled lemon cheesecake. Decorate with the fresh strawberries. Return to the freezer to set completely - about 4-5 hours or over night.

4. Allow the cheesecake to thaw at room temperature for at least 20 minutes before serving.

Chicken Puff Pastry Ramadan Recipes


Have a busy weeknight and wondering what to make? Here is a great way to use up your roast chicken leftovers.

Of course you could make chicken sandwiches or have cold meat and salad…but if you want to try something a bit more interesting, why not try my Chicken Puff Pastry Recipe!

It's perfect for Ramadan as it can be prepared ahead of time and kept in the freezer for at least 1-2 weeks. Bake them right before Iftar and your are ready to go!

Sweet and Sour Spicy Noodles Recipe



 Sweet and Sour Spicy Noodles
 
INGREDIENTS:

Sweet and Sour Sauce:
  • 250g chicken, boneless and cut into small chunks
  • 1 onion, diced
  • 1 bell pepper, diced (use any colour)
  • 2 tomatoes, diced
  • 1 lemon juice 9 tsp 
  • 8 tsp soy sauce
  • 8 tbsp sugar
  • 1/2 tsp salt
  • 1/2 tsp red chilli powder
  • 1/4 cup oil
Spaghetti Noodles:
  • water for boiling
  • 300g spaghetti noodles
  • 1 tsp salt
DIRECTIONS:
  1. Place the spaghetti noodles in boiling water. Next add some salt to taste. 
  2. Cook the pasta until al dente.
  3. Once done drain water from the pasta and set aside.
  4. Meanwhile in a large pot or wok add oil.
  5. Once the oil is hot add the chicken. Fry for 2 minutes. Next add 2 teaspoon soy sauce, 2 teaspoon lemon juice and 1/2 tsp red chilli powder. Fry for a couple of minutes. 
  6. Next add 2 tablespoon of sugar. Stir well and fry until golden brown and the sugar is fully caramelized. Remove from oil and transfer in a small bowl. St aside for later.
  7. In the same pot or wok add onion and bell pepper and fry for 2 minutes.
  8. Next add the tomatoes and fry for a minute. Add 7 teaspoons lemon juice, 6 teaspoons soy sauce, 6 tablespoons sugar, 1/4 teaspoon red chilli powder and salt. Mix and fry for 2-3 minutes.
  9. Next add the prepared spaghetti noodles and chicken. 
  10. Keep stirring and mixing until everything is well combined.
  11. Mix until most of the liquid is caramelized.
  12. Serve warm!
Notes:
To get most of the flavours out season the chicken and the vegetables separately. 
Taste the noodles if it needs more seasonings as needed.

Bang Bang Shrimp | Ramadan Snack Recipes




Assalam 'o' Alaykum everyone!
Shrimp is one of my favourite seafood. If you are a shrimp lover like me then you'll definitely enjoy this recipe!


Bang Bang Shrimp Recipe

INGREDIENTS:
Shrimp
  • 1 cup plain flour (see notes)
  • 1/2 cup cornmeal
  • 690 lb or 300g shrimp peeled, washed and deveined
  • 2 eggs beaten
  • 1/2 tsp salt
  • 1/2 tsp black pepper, ground
  • Oil for shallow frying


Bang Bang Sauce
  • 1/2 cup mayonnaise
  • 1/4 cup sweet chili sauce
  • 1 tsp sriracha sauce


DIRECTIONS:


Prepare Sriracha Sauce: 
In a large bowl combine mayonnaise, sweet chili sauce and sriracha. Mix well with a whisk until everything is well combined. Set a side for later. 

Prepare Shrimp: 
In a bowl combine cornmeal and flour. Whisk well then transfer in a large flat plate. 
Next add salt and black pepper to the beaten egg. Mix well. 
Take the washed shrimps and dip them first in the beaten egg and then in the flour and cornmeal mixture. 
To get a crispier bang bang shrimp do a second coating. Dip them back in the beaten egg and then in then flour mixture. 
In a large pan add some oil for shallow frying. Once the oil is hot add in the coated shrimps. 
Fry each side of the shrimps for 2 minutes or until golden brown. 
Once golden brown remove from oil and transfer onto a paper towel to remove excess oil. 

Prepare Bang Bang Shrimp: 
Take the fried shrimp and add that to the prepared bang bang sauce. Toss to mix well. Make sure all the shrimp is fully coated with the sauce. 
Serve immediately!

Mini Apple Pies | Ramadan Snack Recipes

Assalam 'o' Alaykum everyone!

My dad bought a lot of apples and there were too many that we couldn't eat them all. So I had two options: I could either make a jam out of them or bake apple pies. My sister loves my pastries so it was decided.  You can either bake them or use an air fryer.

INGREDIENTS:
  • 4 medium size apples, finely diced
  • 50g butter
  • 1/2 cup brown sugar
  • 1 tsp cinnamon powder
  • 1/2 tsp salt
  • 2 cups all purpose flour
  • 3 tbsp sugar
  • 6 tbsp cold ice water
  • 150g frozen butter

DIRECTIONS:
 
In a large pan add 50g butter, apple, sugar, cinnamon and salt.

Mix well and stir fry for on medium heat for 20-25 minutes or until the apples are soft and reduced in size. Stir occasionally.

In a large food processor add flour, butter, sugar and process well until it tuns into crumbs. Add ice water and blend until you obtain a dough like consistency.

 Refrigerate dough for 1 hour.

Cut dough in half. Working on the first half dough, roll the dough flat with a rolling pin. Make sure it's not too thick nor too thin. Half inch thick flat dough is what you want. Use a circular stamp to create mini circles and then use a small heart-shaped stamp (or any other shape you like). These will be the top part of the mini pies.

Roll the second half dough flat and use circular stamps to make the base of the circle mini pies. Place a table spoon of caramelized apple filling on the base of the mini pies.

  Cover each base with the heart-shaped top part.

 Seal the edges of the mini pies with a fork. This is also a great and easy way to decor your pies.

Egg wash the pies and sprinkle with some brown sugar.

Airfry apple pies for 30 minutes or until golden brown. Enjoy warm. I have a shared a short video on Instagram to help you understand the steps more!
